Ingredients

  • 2 large chicken breasts
  • (1) 15oz can black beans, drained and rinsed
  • (1) 15oz can black beans, drained
  • (1) 15oz can corn, with juice
  • (1) 10oz can Rotel diced tomatoes with green chilis, with juice
  • 1 medium onion, chopped
  • 0.5 cups chicken broth or stock
  • 1 tsp chili powder
  • 1 tsp cumin powder
  • 0.4oz packet ranch dip or dressing mix
  • 8oz package cream cheese, cut into 6 pieces

Steps

  1. Put all ingredients into Instant Pot and mix
  2. Cook on high pressure for 20 minutes, let depressurize naturally for 10 minutes, then vent.
  3. Shred chicken.
  4. Mix to combine.
