Tortillas
Ingredients
- 2.5 cups all-purpose flour
- 1 tsp kosher salt
- 3 tbsp unsalted butter, softened
- 1 cup warm water
Steps
- Add flour and salt to stand mixer bowl. Whisk together.
- Add butter. Whisk until mixture resembles coarse crumbs.
- With the mixer running on low speed, slowly add warm water.
- Increase the speed to medium and continue mixing for about 5 minutes, or until the dough becomes smooth and elastic.
- Divide dough using kitchen scale according to the measurements in the table below. Form dough into balls and cover with a damp rag. Let rest for 15 minutes.
- Roll out dough on a floured surface using a rolling pin.
- Cook on cast iron between 450° F and 500° F.
- Once cooked, place between two rags to keep warm.
