Ingredients

  • 2.5 cups all-purpose flour
  • 1 tsp kosher salt
  • 3 tbsp unsalted butter, softened
  • 1 cup warm water

Steps

  1. Add flour and salt to stand mixer bowl. Whisk together.
  2. Add butter. Whisk until mixture resembles coarse crumbs.
  3. With the mixer running on low speed, slowly add warm water.
  4. Increase the speed to medium and continue mixing for about 5 minutes, or until the dough becomes smooth and elastic.
  5. Divide dough using kitchen scale according to the measurements in the table below. Form dough into balls and cover with a damp rag. Let rest for 15 minutes.
  6. Roll out dough on a floured surface using a rolling pin.
  7. Cook on cast iron between 450° F and 500° F.
  8. Once cooked, place between two rags to keep warm.
