Ingredients

  • 4 skinless, boneless chicken breast halves (2 chicken breasts)
  • salt and pepper
  • 2 eggs
  • 1 cup panko bread crumbs
  • 0.5 cups parmesan cheese
  • 2 tbsp flour
  • 0.5 cups prepared tomato sauce
  • 0.25 cups fresh mozzarella, cubed
  • 0.25 cups chopped fresh basil

Steps

  1. Preheat oven to 450° F.
  2. Pound chicken to a thickness of 0.5”.
  3. Season chicken with salt/pepper.
  4. Sprinkle flour over both sides of chicken.
  5. Beat eggs in bowl, set aside.
  6. Mix bread crumbs and cups parmesan.
  7. Dip chicken in eggs, transfer to crumb mixture, let rest for 10 to 15 minutes.
  8. Heat 0.5” olive oil to 350° F. Fry chicken until golden on both sides.
  9. Transfer chick to baking dish. Top each breast with 2 tbsp tomato sauce, mozzarella, basil, extra parmesan cheese, and olive oil. 10. Bake in oven for 15 to 20 minutes.
