Ingredients
- 4 skinless, boneless chicken breast halves (2 chicken breasts)
- salt and pepper
- 2 eggs
- 1 cup panko bread crumbs
- 0.5 cups parmesan cheese
- 2 tbsp flour
- 0.5 cups prepared tomato sauce
- 0.25 cups fresh mozzarella, cubed
- 0.25 cups chopped fresh basil
Steps
- Preheat oven to 450° F.
- Pound chicken to a thickness of 0.5”.
- Season chicken with salt/pepper.
- Sprinkle flour over both sides of chicken.
- Beat eggs in bowl, set aside.
- Mix bread crumbs and cups parmesan.
- Dip chicken in eggs, transfer to crumb mixture, let rest for 10 to 15
minutes.
- Heat 0.5” olive oil to 350° F. Fry chicken until golden on both sides.
- Transfer chick to baking dish. Top each breast with 2 tbsp tomato sauce,
mozzarella, basil, extra parmesan cheese, and olive oil. 10.
Bake in oven for 15 to 20 minutes.
